Ingredients

  • 1 lb 450g boneless, skinless Chicken Breast, Finely Shredded
  • 1 cup Shredded Carrots About 2 medium carrots
  • 1 Cup Shredded Cabbage Green or Napa
  • ½ Cup Thinly sliced Red Bell Pepper
  • ½ Cup Bean sprouts
  • 2 Green Onions Finely chopped
  • 2 Cloves Garlic Minced
  • 1 tbsp Fresh ginger Grated
  • 2 tbsp Soy sauce Low-sodium preferred
  • 1 tbsp Oyster sauce
  • 1 tsp Sesame oil
  • 1 tsp Rice vinegar
  • ½ tsp Black pepper
  • 1 tbsp cornstarch mixed with 2 tbsp water slurry, optional for binding

For the Spring Rolls:

  • 12 15 spring roll wrappers 8-inch square, thawed if frozen
  • 2 tbsp water for sealing wrappers
  • Cooking spray or 1 tbsp neutral oil like avocado or canola for brushing

For the Dipping Sauce:

  • ¼ cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp chili garlic sauce optional, for heat
  • 1 tsp sesame seeds optional, for garnish

Step 1: Prepare the Chicken Filling

  • Sauté the Vegetables: In the same skillet, add another 1 tsp sesame oil. Add minced garlic and grated ginger, cooking for 1 minute until fragrant. Add shredded carrots, cabbage, red bell pepper, and bean sprouts. Stir-fry for 3–4 minutes until the vegetables soften but remain crisp.
  • Season the Filling: Return the cooked chicken to the skillet. Add soy sauce, oyster sauce, rice vinegar, and black pepper. Stir well to combine. If the mixture is too loose, add the cornstarch slurry and cook for 1 minute until slightly thickened. Stir in green onions and remove from heat. Let the filling cool slightly (about 5 minutes).

Step 2: Assemble the Spring Rolls

  • Prepare the Wrappers: Place a spring roll wrapper on a clean, flat surface in a diamond shape (one corner pointing toward you). Keep remaining wrappers covered with a damp towel to prevent drying.
  • Add Filling: Spoon 2–3 tablespoons of the chicken filling onto the lower third of the wrapper, about 2 inches from the bottom corner.

Roll the Spring Roll:

  • Fold the bottom corner over the filling, tucking it snugly.
