Ingredients
  

For the Filling:

  • 2 large ripe avocados diced
  • cup canned black beans rinsed and drained
  • cup canned sweet corn drained
  • 2 tbsp red onion finely diced
  • 2 tbsp fresh cilantro chopped
  • 1 tbsp fresh lime juice
  • ½ tsp cumin
  • ¼ tsp chili powder
  • Salt and black pepper to taste

For Assembling:

  • 12-14 square vegan spring roll wrappers or eggless wonton wrappers look for "Thai Kitchen" or similar brands
  • Optional add-in: 1-2 tbsp diced sun-dried tomatoes or jalapeños for a kick

For Cooking & Serving:

  • 2-3 tbsp water for sealing
  • Avocado oil or olive oil spray
  • For the Dip: Vegan cilantro-lime crema sweet chili sauce, or chipotle

Instructions
 

Make the Filling:

  • 🔸️In a medium bowl, gently combine the diced avocado, black beans, corn, red onion, and cilantro. Drizzle with lime juice and sprinkle with cumin, chili powder, salt, and pepper. Gently fold everything together until just combined. Be careful not to over-mix—you want to keep some texture from the avocado.

Prep the Wrappers:

  • 🔸️Lay one spring roll wrapper on a clean, dry surface in a diamond orientation (a point facing you). Keep the other wrappers under a slightly damp kitchen towel to prevent them from drying out.

Fill and Roll:

  • 🔸️ Place about 1 ½ tablespoons of the avocado filling in the center of the wrapper.
    🔸️ Fold the bottom point of the wrapper up over the filling.
    🔸️ Fold the left and right points inward towards the center.
    🔸️ Lightly brush the top edges of the wrapper with water.
    🔸️Gently but tightly roll the bundle away from you toward the top point, sealing the roll. It should resemble a small, tight burrito.

Air Fry:

  • 🔸️ Preheat your air fryer to 370°F (190°C) for 3 minutes.
    🔸️ Lightly spray the air fryer basket with oil. Arrange the eggroll bites in a single layer in the basket, ensuring they are not touching. You may need to cook in batches.
    🔸️ Lightly spray the tops of the eggroll bites with oil. This is crucial for browning!
    🔸️Air fry for 8-10 minutes, flipping halfway through, until the wrappers are golden brown and incredibly crispy.

Serve:

  • 🔸️Let the eggroll bites cool for a few minutes—the filling will be very hot! Serve immediately with your chosen dipping sauce.

Notes

🔹️ Ripe but Firm Avocados: Use avocados that are ripe but still slightly firm. This prevents them from turning to mush when you mix and roll.
🔹️ Keep Wrappers Moist: This is the most important tip! Wrappers dry out incredibly fast. Keep them covered until the very moment you are ready to use them.
🔹️ Don't Overfill: Overfilling is the main cause of bursting. Use about 1.5 tbsp of filling per wrapper.
🔹️ Ensure a Tight Seal: Brushing the final edge with water and pressing firmly ensures your eggroll bites don't unravel during cooking.
🔹️No Air Fryer? You can bake these on a parchment-lined baking sheet at 400°F (200°C) for 15-20 minutes, flipping halfway.
